Palak Babycorn Gravy is a delicious curry prepared using palak leaves and babycorn that are cooked with sauteed onion, tomato and other spices. This curry goes well with roti, chapati phulka.
Ingredients:
Palak – 4 bunches, chopped
Babycorn cobs – 4, peeled and sliced
Onions – 2, chopped
Tomatoes – 2, chopped
Ginger Garlic Paste – 1 tsp
Green Chillies – 2, slit lengthwise
Red Chilli Powder – 1 tsp
Turmeric powder – 1/4 tsp
Garam Masala powder – 1 tsp
Cumin Seeds – 1 tsp
Butter or fresh cream – 1 tsp
Oil – 1 tbsp
Salt to taste
Method:
Cook palak in little water and let it cool.
Heat oil in a pan, add cumin seeds. When they turn slightly brown, add onion, ginger garlic paste and green chilli. Saute till onion turns golden brown. Add tomatoes and saute until they get mashed. Add turmeric powder, red chilli powder, salt, garam masala powder and saute for 2mins. Add cooked babycorn pieces and blended palak and cook on low flame for 5mins. Add butter or fresh cream and serve hot.
P.S: You can replace babycorn with paneer, soya chunks or mixed vegetables.
