Carrot Halwa is a classic Indian sweet dish prepared using grated carrot, milk, sugar, cardamom and ghee. This sweet tastes the best when served hot. When served with a dollop of vanilla ice cream that taste of this delicious sweet gets elevated to another level up.
Ingredients:
Carrot – 4 cups, grated
Milk – 6 cups
Sugar – 1 1/2 cups
Cardamom Powder – 1 tsp
Saffron – 6 strands, soaked in 1tsp milk
Cashewnuts – 10, fried in little ghee
Raisins – 12, fried in little ghee
Ghee – 2 tbsps
Method:
In a large pan, cook carrot in milk. Keep stirring now and then. When carrot gets cooked, add sugar. Keep stirring continuously until all the milk condenses and forms a lump. Add ghee, cardamom powder and saffron. Add cashewnuts and raisins. Mix well. Serve hot.
