This classic Tomato Soup is thick, flavorful and delicious. This Indian styled soup is prepared with tomatoes, carrot, garlic, onion and spices.
Ingredients:
Tomatoes – 6, chopped
Carrot – 1, grated
Onion – 1, chopped
Garlic Cloves – 6 small sized, chopped
Cinnamon – 1cm long
Cloves – 4
Cornstarch – 1 tablespoon
Pepper powder – 1/2 teaspoon
Sugar – 1 teaspoon
Oil – 1 1/2 tablespoons
Salt to taste
Butter/ Cream to top
Fried bread cubes(Croutons) – 15
Method:
- Heat oil in a pressure cooker .
- Add cinnamon and cloves and fry little bit.
- Add garlic and onion. Fry till onion turns to light brown in color.
- Add carrot and tomatoes and fry till tomatoes become soft and mushy.
- Add sugar, salt, pepper powder and 3 cups of water and pressure cook until tomatoes are soft and mushy. Turn off the heat. Once it cools down, blend it and strain it.
- Dilute cornstarch in two cups of water. Pour this to the soup and boil it.
- Top it with cream/butter and croutons. Serve hot.
