Paneer Kheer is prepared using fresh paneer that is cooked in milk, sugar and condensed milk. Cardamom and saffron are added to enhance the flavor.
Ingredients:
Paneer – 200gms
Fresh Milk – 1 litre
Sugar – 3/4 cup
Condensed Milk – 1/2 cup
Cardamom Powder – 1/2 tsp
Saffron – 7 to 8 strands soaked in 2 tbsps hot milk
Cashew nuts, raisins, almonds, pistachios – 1/4 cup
Ghee – 1 tbsp
Method:
- Roast cashew nuts, raisins, almonds and pistachios using a tbsp ghee. Keep aside.
- Boil milk until it reduces to 3/4 the original quantity.
- Meanwhile grate paneer. Keep aside.
- Add sugar to the reduced milk and boil until the sugar melts.
- Add cardamom powder, saffron milk and condensed milk. Mix well.
- Add grated paneer, set the flame to low and bring to a boil. Turn off the heat.
- Now add cashew nuts, raisins, almonds and pistachios. Mix well.
- Serve hot.
