Alphabet Cake has taken internet by a storm. This Alphabet Cake is a fresh fruit eggless cake with custard filling topped with some fresh fruits and cookies.
What is Alphabet Cake?
The trend of Alphabet Cake started as it gives a personal touch to the cake by using the filling of your liking and topping that you desire. This cake is so versatile that you can use any type of cake, brownie, tart etc.,
How did I make this cake?
I have used a basic eggless vanilla sponge cake as the base. For the filling, I have used custard filling. As toppings, I have used fresh fruits like strawberries, blueberries, blackberries, dragon fruit and some Oreo cookies.
Ingredients
FOR THE CAKE:
All Purpose Flour – 3 cups
Thick Curd – 2 cups
Sugar – 1 1/2 cups
Canola Oil – 1 cup (or any other vegetable oil)
Vanilla Essence – 1 1/2 tbsps
Baking Powder – 3 tsps
Baking Soda – 1 tsp
Salt – 1/2 tsp
Milk – 1/8 cup
FOR THE CUSTARD FILLING:
Whole Milk - 1 cup
Vanilla flavored Custard Powder - 4 tablespoons
Whipping Cream - 1 1/2 cups
Powdered Sugar - 1/2 cup
Vanilla Extract - 1 tablespoon
Instructions
PREPARING CAKE:
- Preheat the oven to 180 degrees C/350 F.
- Grease and dust a 9" x 13" rectangular cake tin.
- In a bowl, take curd and beat it until it is smooth and there is no lump.
- Add sugar and beat until the sugar melts.
- Now add baking powder, baking soda and salt to the curd mixture. Set aside for 3-4 minutes until it becomes frothy.
- Pour oil and vanilla essence. Mix gently until well combined. Do not over mix as the air captured in the mixture might be lost.
- Fold in all purpose flour, using a spatula. Mix gently until well combined. Do not over mix.
- Pour the cake batter into the prepared cake tin.
- Bake for approximately 30 to 40 minutes or until the skewer inserted in the centre of the cake comes out clean.
- Remove the cake tin from the oven and smear little milk on top of the cakes using an pastry brush. This will give a glossy, golden brown color to the cake.
- Place the cake tin back in the oven and bake for another 5 minutes.
- Remove the cake tin from the oven and place them on a wire rack to cool down.
- Unmould the cake and halve it horizontally. Shape each half into desired letter. I choose the letter "V". Hence I cut two V letters one from each half. Keep the cut-out cake pieces aside.
PREPARING CUSTARD FILLING:
- Mix 1/4 cup of custard powder in a small bowl until well combined.
- Take the remaining 3/4 cup of milk in a sauce pan and bring it to a boil. Turn off the heat.
- Gradually pour the custard powder mixed milk into the boiled milk while stirring continuously to avoid formation of any lumps. Cook it for 1-2 minutes on medium flame until it thickens. Turn off the flame.
- Transfer the prepared custard into a bowl, cover and refrigerate until it is chilled.
- Once the custard has chilled, start whipping the cream. When the cream thickens slightly, add the powdered sugar and vanilla extract. Continue to whip it until it forms stiff peaks.
- Now add the chilled custard to the whipped cream and whip again until it forms stiff peaks.
ASSEMBLING THE CAKE:
- Place the prepared letter on a cake board.
- Transfer the whipped custard filling into a piping bag, use a tip that would pipe out the filling in the shape of Hershey's Kisses. Pipe the filling all over the top of the cake in straight lines.
- Now place the other letter piece on top of the filling.
- Again pipe out the filling in staring lines on top of the cake.
- Place the fruits, cookies or macaroons on top of the filling as you desire.
Notes:
- I used a regular sponge cake as the base. You can opt any other cake or tart instead.
- The two cake pieces must be identical in size. You can use some templates or stencils for help if needed.
- I have used custard filling. You can use any other filling or frosting of your choice.
- The topping options are endless – you can use cookies, fruits of your choice, edible flowers, macaroons.
