This is a classic Vanilla Sponge Cake recipe that makes soft, rich and delicious cake without eggs.
Ingredients:
All Purpose Flour (Maida) – 120 grams
Powdered Sugar – 120 grams
Butter – 4 1/2 tbsps
Milk Powder – 4 tbsps
Baking Powder – 1 tsp
Cooking Soda – a pinch
Vanilla Essence – 1 tsp
Milk – 250ml
Salt – a pinch
Method:
- Sieve together maida, baking powder, cooking soda twice.
- Take butter and powdered sugar in a large bowl and beat well until light and fluffy.
- Add milk powder and beat well.
- Add maida gently.
- Now add milk and beat well. The batter must have dropping consistency.
- Add essence and mix well.
- Take a cake tin and grease it with little ghee or butter and dust with some maida.
- Pour the batter and level it evenly.
- Place the cake tin in the oven and bake it at 180 degrees for 30mins.
- Remove from oven and let it cool on wire rack.
- Unmould and cut into desired shape.
