Raw Mango Palya is sweet, sour and spicy side dish prepared in Havyaka community using raw mangoes in summer. Raw Mango pieces are cooked with salt, red chili, jaggery, coconut and seasoned with roasted garlic. This dish tastes best when served with rice especially yogurt rice.
Ingredients:
Raw Mangoes – 2, medium sized
Jaggery – 6 tbsps, grated (vary depending on taste)
Red Chilli powder – 1/2 tsp
Garlic Flakes – 8, peeled and chopped
Curry Leaves – 6
Dry Red Chillies – 2, cut into pieces
Mustard Seeds – 1 tsp
Cumin Seeds – 1/2 tsp
Oil – 2 tsps
Salt to taste
Method:
- Cut mangoes into pieces.
- In a frying pan, take mango pieces, salt, jaggery and red chilli powder and curry leaves.
- Add 1/2 cup water and boil on medium flame until mango pieces and cooked.
- In another frying pan, heat oil, saute garlic on medium flame until it turns brown.
- Add mustard seeds and cumin seeds.
- When mustard seeds start to splutter, season this on cooked mangoes.
- Serve with rice.
