Shevige, also known as Semige is a Mangalore speciality breakfast item prepared using rice. The rice is ground to fine batter, cooked until it solidifies, rolled into small oval shapes and steam cooked. These steam cooked dough is pressed using a Shevige press to make these Rice Noodles. This is served hot with coconut milk, banana rasayana, sambhar or used in making various other dishes.
Ingredients:Rice – 2 cups, soaked for 2-3hours

Method:
- Grind rice to a very smooth batter.
- Add salt.
- Add enough water to get a consistency slightly more than water consistency.
- Take a heavy bottomed pan and cook this batter stirring continuously till it forms a lump that is not sticky.
- When it cools make oval shaped portions of this batter and cook them in steam for 30mins.
- When hot, press each portion with a noodles maker and spread the noodles on a tray.
- Serve this with sweetened coconut milk/sambhar.
P.S: This can be used to make variety of dishes like lemon baath, chitranna, pulao etc.
