This eggless Banana Muffin is easy to prepare and tastes delicious making is great snack for kids.
Ingredients:
All Purpose Flour (Maida) –Â 1 cup ( I used a cup of 300ml volume)
Well Ripened Bananas – 5 small sized
Powdered Sugar – 3/4 cup
Butter – 1/2 cup
Milk – 175ml
Vanilla Essence – 1 tsp
Baking Powder – 1/2 tsp

Cooking Soda – 1/2 tsp
Salt to taste
Crushed Pecans/Walnuts – 5 tbsps

Method:
- Peel bananas and mash them into smooth paste.
- Sift maida, baking powder, cooking soda and salt twice together.
- Take butter in a large mixing bowl along with powdered sugar. Beat until soft and fluffy.
- Add mashed banana and vanilla essence mix well.
- Now sifted flour and milk. Mix well.
- Place the paper muffin cups in the muffin mould.
- Put the batter in each cup until it is half filled.
- Sprinkle some crushed pecans/walnuts.
- Bake at 180 degrees for 25 minutes.
