Achari Gobhi is a vegetable side dish prepared by cooking bite sized cauliflower florets in a blend of spices. This dish can be served with roti, phulka, chapati or plain cooked rice.
Ingredients:
Cauliflower – 1 medium sized
Onions – 2
Cumin Seeds – 1/2 tsp
Mustard Seeds – 1/2 tsp
Fenugreek Seeds – 1/4 tsp
Onion Seeds (Nigella Seeds/Kalonji) – 1/2 tsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/2 tsp
Ginger Garlic Paste – 1 tsp
Sugar – 1/2 tsp
Garam Masala Powder – 1 tsp
Curd – 3/4 cup
Salt to taste
Oil – 1 tbsp
For Garnishing:
Coriander Leaves, chopped – 1 tbsp
Method:
- Cut cauliflower into pieces and clean them thoroughly.
- Heat oil in a wok, add fenugreek seeds, onion seeds, cumin seeds and mustard seeds.
- When the seeds start sizzling, add chopped onion and saute until onion turns translucent.
- Add chopped cauliflower pieces, turmeric powder, red chilli powder, garam masala powder, sugar and salt. Mix well.
- Sprinkle little water over the cauliflower pieces and cook covered for a few minutes.
- Add curd and ginger garlic paste. Mix well. Continue to cook covered until all the water content evaporates.
- Garnish with coriander leaves and serve.
