Kanda Bachali Koora is a traditional dish from Andhra Pradesh prepared by cooking yam and malabar spinach togther with some spices. This dish is best when served with hot rice and ghee.
Ingredients:
Yam – 1 cup, peeled and cubed
Spinach – 1 cup chopped
Tamarind – 1 tbsp
Mustard Powder – 1/2 tsp
Salt to taste
Mustard seeds – 1/2 tsp
Black Gram – 1/2 tsp
Bengal Gram – 1 tsp
Curry Leaves – 6
Green Chillies – 4, chopped
Dry Red Chillies – 2, cut into pieces
Oil – 1 tsp
Method:
- Boil the yam cubes with enough water and tamarind pulp.
- Once the yam cubes are cooked well, strain out all the water.
- In a pan, cook spinach until it soft with little water
- Add cooked yam cubes and salt and mix well.
- Cook until there is no more water in the pan.
- Heat oil in a pan, add chopped green chillies, bengal gram, black gram, mustard seeds, dry red chillies, curry leaves.
- When mustard starts to splutter add this to cooked yam and spinach.
- Remove this curry off heat.
- Add 1 tbsp water to the mustard powder, mix well and add this to the curry.
- Mix well and serve hot with rice.
