Baby Corn Pepper Dry is a delicious appetizer prepared using small tender baby corns. Slices of baby corn are sauteed in a spicy mixture of onions, pepper and garlic until the baby corn slices turn crispy. The taste of this appetizer is sure linger for sometime in your taste buds.
Ingredients:
Baby corns – 12
Onions -3
Dry Red Chillies – 4
Peppercorns – 8
Garlic Cloves – 6
Mustard seeds – 1/2 tsp
Curry Leaves – 6
Coriander Leaves – 1 tbsp
Oil – 1 tbsp
Salt to taste
Method:
- Slice babycorns diagonally.
- Boil the slices with little water and salt until it is cooked.
- Chop one onion.
- Heat oil in a pan and fry dry chillies, peppercorns and onion till onion turns translucent in color.
- Let it cool.
- Blend it into a smooth paste.
- Heat oil in another pan, add mustard seeds.
- When mustard seeds start to splutter, add curry leaves, two chopped onions and garlic and saute till onion turns translucent in color.
- Add cooked babycorn slices and saute until babycorn slices turn slightly crispy.
- Add blended paste and fry on low flame until it becomes dry.
- Garnish with coriander leaves.
- Serve hot.
