Aloo Matar is spicy and flavorful curry made using potato and fresh green peas that are cooked in a spicy onion based gravy. This curry goes with roti, chapati, phulka, naan or any flavored rice.
Ingredients:
Potatoes,boiled,peeled and cubed – 1 cup
Fresh Green Peas – 1/2 cup (I used both)
Onion – 3 large
Tomatoes – 3 large
Green Chillies – 4
Garlic Flakes – 6
Ginger, chopped – 1 tbsp
Coriander Leaves,chopped – 1/2 cup
Kasuri Methi – 2 tbsps (optional)
Fresh Cream – 3 tbsps
Cumin Seeds – 1 tsp
Garam Masala – 1 tsp
Oil – 2 tbsps
Salt to taste
Method:
- Blend onion, garlic, ginger,coriander leaves, green chillies into a smooth paste.
- Heat oil in a pan, add cumin seeds and saute till the seeds turn slightly brown.
- Add blended onion paste and kasuri methi.
- Saute until the paste turns brown stirring frequently.
- Add chopped tomatoes and saute until tomatoes turn soft and mushy.
- Meanwhile slightly boil cauliflower pieces.
- Now added cubed potaoes and green peas.
- Add 1/2 cup water and cook for 3-4mins.
- Add salt, garam masla and cook for 2mins.
- Now add fresh cream and cook for a minute.
- Garnish with coriander leaves and serve hot with Pulkas/Parata/Naan.
