This Eggless Apple Cinnamon Cake is perfect recipe for tea time snack.
Ingredients:
All Purpose Flour (Maida) – 1 cup
Apple, cored and chopped with skin – 1 cup
Flaxmeal – 2 tbsps mixed & soaked in 6 tbsps of luke warm water for 10 minutes.
Pecans, crushed – 1/4 cup
Powdered Sugar – 3/4 cup
Baking Powder – 3/4 tsp
Baking Soda – a pinch
Vanilla Essence – 1 tsp
Cinnamon Powder – 1/2 tsp
Oil – 1/2 cup
Salt – a pinch
For topping:
Apple slices (thin)Â – 20
Clarified Butter – 1 tbsp
Cinnamon Powder – 1/4 tsp
Sugar – 3/4 tbsp
Method:
- Sift flour, baking powder, baking soda and cinnamon powder together twice.
- Take soaked flaxmeal, powdered sugar, salt, vanilla essence in a large mixing bowl. Beat well until it soft .
- Add oil and beat until it forms small bubbles.
- Fold in the sifted flour and mix the batter gently with a spatula.
- Add chopped apples and pecans. Mix well.
- Preheat the oven to 180 degrees C.
- Pour the batter into a greased and dusted cake tin.
- For topping, place the apple slices on top.
- Mix sugar, cinnamon powder in clarified butter and sprinkle it on the apple slices.
- Bake at 180 degrees for 35- 40 minutes or until the skewer inserted in the center comes out clean.
- Let it stand in the oven for 10 mins before removing it out.
- Unmould once cooled down.
