Carrot Cold Kheer is a very light and delicious dessert. It is prepared by blending boiled carrots with chilled milk and cashew nuts. Cardamom powder and roasted cashew nuts are used to enhance the flavor.
Ingredients:
Carrots – 6
Milk – 1 litre, boiled and cooled
Cashewnuts – 1/2 cup
Sugar – 1/2 cup
Cardamom powder – 1 tsp
Method:
- Peel carrots and pressure cook them.
- Once cool, grind carrots, cashewnuts with 1 cup milk into a smooth paste.
- Add cardamom powder and mix well.
- Dilute it with remaining milk
- Garnish with roasted cashewnuts.
- Refrigerate and serve chilled.
