Haalbaai is a tradition sweet dish of Karnataka prepared using finely ground rice, coconut milk and jaggery. This dish is lightly sweetened, extremely smooth on your tongue and is delicious. It tastes the best when served hot with ghee.
Ingredients:
Rice – 1 cup, soaked for 1 hour
Coconut milk – 3 cups
Jaggery – 1 cup, powdered
Cardamom powder – 1/2 tsp
Ghee – 1/4 cup
Salt to taste
Method:
- Grind rice with coconut milk into a smooth batter. Add jaggery, salt and cardamom and grind little bit. This batter will be watery.
- Pour batter into a heavy bottomed pan and eep stirring continuously until it gets cooked. Add ghee and stir little bit.
- Spread it on a greased tray and let it cool.
- Cut into squares. Serve with ghee.
This tastes better when it is cooled at room temperature.
