This Veg Pizza recipe is makes two 12″ pizzas with in easiest and quickest way with all the toppings of your choice.
Ingredients:
Lukewarm Water – 1 1/8 cups
Sugar – 1/2 tablespoon
Active Dry Yeast – 1/2 tablespoon
Unbleached All-Purpose Flour – 3 cups
Olive Oil – 1 tablespoon
Salt – 2 teaspoons
Yellow Cornmeal (slightly coarse) – 1/4 cup
Mozzarella Cheese, grated – 3 cups
Pizza Sauce – 1 1/2 cups
Veggies of you choice
Dried Oregano – 2 teaspoons
Method:

Take lukewarm water in a small bow, add sugar and active dry yeast. Whisk well and set it aside for 10 minutes until it turns frothy and increases in volume. If it does not turn frothy, discard and make a new batch. This is very crucial to get perfect crust.

In a large mixing bowl, take flour, salt and olive oil. Mix well to combine.
- Pour the yeast mixture and knead the dough using a stand mixer or by hand, until you get a soft and smooth dough. Do not over-knead the knead.
- Place the dough in a greased bowl and cling wrap it. Allow the dough to rise and double in volume about 60 to 90 minutes. Depending on the weather, it could take a little more or less time. That is OK.
- Preheat the oven to 450F. Keep a 12″ pizza pan or stone or tray in the oven so that it heats up.
- Divide the dough into two. Take one portion of the dough and roll it into 1/2″ thick round using some cornmeal for dusting. This should make a 12″ round circle crust. Run your fingers around the edges of the circle, about 1/2″ inward making slight depression allowing the edge to puff up little bit. This will keep the sauce and cheese in place without letting it run down the crust.
- Take the pizza pan out from the oven and transfer the pizza crust into the pan.
- Spread some pizza sauce lightly on the surface of the crust. Sprinkle some grated mozzarella cheese, top it with veggies of your choice and sprinkle some more cheese and oregano on top.
- Bake the pizza for about 20 minutes or until the crust turns golden and crispy, the cheese is melted and bubbles up slightly. Remove the pizza from the oven and allow it to cool down for a couple of minutes.
- Cut and serve.
Note:
In case you want to prepare the pizza dough ahead of time and prepare the pizza later, allow the dough to rise for about 45 minutes and then refrigerate the dough for up to 24 hours, tightly covered, allowing it to slowly rise while the dough is chilling. 3 to 4 hours before you want make the pizza, take the dough out and let it sit at room temperature.
