Lemon Rice is a flavored rice from South India prepared by using fresh lemon juice to flavor the rice. This is one of easiest and quickest rice that one can make.
Ingredients:
Sona Massori Rice – 2 cups
Lemon Juice – 4 tbsps
Turmeric Powder – 1/2 tsp
Green Chillies – 5, slit
Mustard Seeds –Â 2 tsps
Black Gram – 2 tsps
Bengal Gram – 2 tsps
Ground Nuts – 1/4 cup
Curry Leaves – 8
Dry Red Chillies – 4,cut into pieces
Asafoetida – a pinch
Oil – 5 tbsps
Salt to taste
Coriander Leaves – for garnishing
Method:
- Cook rice with salt till the grains are still separate.
- Spread the rice on a plate and let it cool.
- In a heavy bottomed pan, heat oil and saute ground nuts.
- When the groundnuts turn slightly brown, add mustard seeds, black gram, bengal gram, red chillies, curry leaves and asafoetida.
- Add slit green chillies.
- When mustard starts to splutter, add turmeric powder.
- Now add cooked rice and mix well.
- Turn off the heat and add lemon juice and mix well.
- Add more salt if required and mix well.
- Garnish with coriander leaves and serve.
