Badushah or Balushahi is an Indian sweet prepared using all-purpose flour, yogurt and ghee. This deep fried sweet is crispy from outside, soft and flaky from inside.
Ingredients:
All Pupose Flour (Maida) – 1 1/2 cups
Ghee – 1/4 cup
Curd – 1/4 cup
Cooking Soda – 1/4 tsp
Salt – a pinch
Oil/Ghee for deep frying
For Sugar syrup:
Sugar – 1 1/2 cups
Water – 1 cup
Method:
- Sift flour, cooking soda and salt twice.
- In a large mixing bowl, take the sifted flour, maida and ghee and knead into a soft dough.
- Set it aside for 30minutes.
- Knead it again
- Take a small lemon sized portion of the dough and roll it into a roundel. Keep the roundel between your palms and press it gently into a thick disc. Carefully twist the disc through the edges.
- Prepare sugar syrup y boiling sugar and water. Turn off the heat before it reaches a single thread consistency.
- Heat oil/ghee in a frying pan.
- Deep fry the moulded dough on low flame until it turns golden brown and soak it in sugar syrup.
- Repeat the same for remaining dough.
- Soak them in sugar syrup for about 30minutes.
- Carefully remove each piece from the sugar syrup and place it on a plate.
- Serve hot.
- To store for 2-3 days, store them in an air-tight container once cooled to room temperature.
