Mandarin Orange Saaru is a sweet and sour rasam prepared mostly using mandarin juice and jaggery. This saaru can be used for drinking like a soup or can be served with some rice and ghee.
Ingredients:
Mandarin Oranges – 2
Jaggery Powder – 1/2 cup
Salt to taste
For Seasoning:
Mustard Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Curry Leaves – 5
Dry Red Chilli – 1
Ghee – 1 tsp
Method:
- Boil 3 cups of water with jaggery powder.
- Add salt and continue to boil until it reduces bit volume. Turn off the heat.
- Extract the juice from the mandarin oranges and add this juice to the boiled water.
- Heat ghee in a wok, add mustard seeds, cumin seeds, curry leaves and dry red chilli pieces.
- When mustard seeds start spluttering, add this to saaru.
- Serve with hot rice.
