Shami Kabab is a variety of kabab originating from India. Typically, Shami kabab is prepared using chana dal and meat. THis recipe is my take on maikng the kabab using palak leaves. Instead of Chana dal, I have fried gram.
Ingredients:
Spinach/Palak – 2 small bunches
Fried Gram – 4 tbsps
Onion – 1
Ginger – 1/2 inch long piece
Garlic Cloves – 4
Green Chillies – 3
Lemon Juice – 2 tsps
Garam Masala Powder – 3/4 tsp
Chaat Masala – 1/2 tsp
Salt to taste
Oil – 8 tbsps
Method:
- Thoroughly wash palak leaves and finely chop them.
- Chop onion. Keep aside.
- Shred ginger, garlic cloves and green chillies together.
- Heat 1 tbsp oil in a pan.
- Add chopped onion and saute until golden brown.
- Mix the shredded ginger, garlic and chilli mixture. Saute for 2 minutes.
- Now add chopped leaves and cook until it turns soft.
- Add garam masala and salt. Mix well.
- Meanwhile, finely powder the fried gram in a blender.
- Add the fried gram powder to the cooking leaves. Mix well.
- Turn off the heat.
- Pour lemon juice and chaat masala on the mixture. Mix thoroughly.
- Make small equal sized patties of this mixture.
- Heat all the remaining oil in a flat bottomed pan/griddle and shallow fry these patties on both sides.
- Serve hot with green chutney or sauce and onion slices.
