Mango Buns is a thick leavened deep-fried poori prepared using all-purpose flour and mango pulp. A speciality of Mangalore, Buns is traditionally prepared using flour and banana. This Mango Buns a variation to that.
Ingredients:
All Purpose flour(Maida) – 2 cups
Mango – 1 large sized, ripened
Sugar – 4 tsps
Sour Curd – 1/4 cup
Cumin Seeds – 1/2 tsp
Cooking Soda powder – 1 tsp
Oil – 3 tsp
Salt to taste
Oil for deep frying
Method:
- Peel, slice and blend mango slices into a smooth paste.
- In a mixing bowl mix blended mango, sugar, salt, cumin seeds, cooking soda powder, oil and curd.
- Mix well.
- Add maida and knead it thoroughly to form a dough like that of chapati.
- Ferment overnight or atleast for 8hrs.
- Make small roundels of this dough, roll them into thick discs.
- Heat oil in a frying pan and deep fry the discs in oil till brown.
- While frying, push the disc downwards using a spatula so that it fluffs up.
- Serve with coconut chutney and sambhar.
