Sabudana Vada is a Maharastrian snack prepared using sabudana, potato, crushed peanuts, lime juice and some spices. Traditionally these vadas are deep fried until crisp. However, for the health conscious, they taste amazing when air-fried too.

Ingredients:
Sago (Sabudana) – 1 cup
Potatoes – 2 medium
Lemon Juice – 2 tablespoons
Coriander leaves, chopped – 3 tbsps
Green Chillies, chopped – 1 tbsp
Groundnuts, roasted – 1/4 cup
Ginger, minced – 2 tsps
Turmeric Powder – 1 tsp
Salt to taste
Oil for deep frying
Method:
- Soak Sago in water for atleast 2-3 hours.
- Boil potatoes and finely mash them.
- Chop onions
- Separate the skin of roasted groundnuts.
- Take mashed potatoes, green chillies, coriander leaves, turmeric powder, ground nuts, salt, ginger, lemon juice and mix well.
- Strain out excess water sago and mix into the potato mixture. Mix well.
- Heat oil in a wok.
- Take small portions of the mix, pat it slightly and deep fry in oil.
- Serve with mint and coriander leaves chutney or sauce.Â
To Air-Dry:
- Preheat the air-fryer for 400F.
- Smear little oil on either sides of the vadas.
- Air-fry at 400F for 10mins.
- Flip the side and air-fry for another 7-8 minutes or until it turns crisp and golden on the outside.
