Akki Unde is a steam cooked rice dumpling prepared by cooking finely ground rice along with bengal gram and coconut. Small portions of this dough is rolled into balls known as Unde or Undrallu and then steam cooked. They can be served as breakfast and taste good with spicy coconut chutney.
Ingredients:
Rice – 2 cups
Coconut Shavings – 1Â cup
Bengal Gram – 3 tbsp
Salt to taste
Method:
- Wash rice thoroughly and spread it on a cloth 7-8 hours before.
- Break them into rawa using a mixer without adding any water.
- Boil 6 cups of water in a deep bottomed pan.
- Add bengal gram and coconut shavings to boiling water.
- Now add rice rawa and salt and continue to cook stirring continuously until it forms a lump.
- Turn off the heat and let the dough cool to room temperature.
- Make orange-sized roundels and cook them in steam for about 20-30mins.
- Serve hot with coconut chutney.
